The length of the handle determines the size of the knife:
-The closed length 9 cm (open size 17 cm) is suitable for a knife to be carried in a bag or pocket.
-The closed length of 11 cm (open size 20 cm) is suitable for all hands.
-The 12 cm closed length is best suited to a strong man's hand.

Ebony has specific uses due to its particular properties (hardness, unusual colour, longevity), its price and its weight (extremely dense so very heavy).
It is nearly exclusively used for making small elements such as, for example, piano keys or knife handles. It is sometimes found adorning artistically crafted stringed-instruments or in the form of small and precious jewellery caskets or the like.
Ebony has been used since high antiquity for its colour, often to make small precious objects and more rarely furniture, in which it could be set in contrast with ivory or mother-of-pearl.
The use of ebony has continued through the ages and it has given its name in French to those who work it: "ébénistes" (furniture and cabinet-makers).
